Around 20% could not realign their rhythms even during free time. Notably, longer tenure on nights was associated with worse effects rather than better ones.

That was hospital staff rather than bakers, and the schedule is not identical. But it undercuts the main consolation people on permanent nights are offered, and it reframes what you are optimising for. You are not waiting to adapt. You are managing an ongoing misalignment, indefinitely, and the tools for that are timing consistency, light control and protected sleep — not endurance.

The one advantage a permanent schedule has over a rotating one is real, though, and worth using. Your wake time can be the same every working day, which means your body clock gets the chance to learn it and start preparing in advance. In the UK, the Working Time Regulations define night time as 11pm to 6am and treat someone who normally works at least three hours in that window as a night worker — which a 1am start plainly is.
